Red Onion Spread

This is a tasty, versatile spread and an easy-to-make gift idea. Cook up a batch for your friends and loved ones this holiday season -- we promise they’ll ask for more! Thanks to our very own Teri Gibson for developing and sharing this recipe!

COOK TIME: 45 minutes

Ingredients
2 Tablespoons Extra Virgin Olive Oil
6 Medium-size Red Onions
1/2 Cup Brown Sugar
1/2 Cup Good-Quality Red Wine Vinegar
2 Tablespoons Balsamic Vinegar
1-1/2 Tablespoons Fresh Thyme

Directions
Peel, core and slice the red onions. Heat olive oil in a large heavy pot over medium heat. Add onions and cook, tossing them gently for about 10 minutes. Add brown sugar and vinegars. Reduce heat to low and cook until juice is reduced to almost nothing and the onions are very soft but not mushy. Gently stir in the Thyme. Spoon the onion spread into sterilized jars and store in refrigerator for up to three weeks.

This Red Onion Spread is a wonderful condiment for grilled steak, chicken, pork chops and also as a topping for brie and bruschetta.
