A Fiesta of Flavor

Fiesta Chicken Tostadas

Fiesta Chicken TostadasIngredients
1 rotisserie chicken, meat coarsely shredded (4 cups)
1 medium white onion
1 16-oz jar of prepared salsa
3 cups shredded iceberg lettuce
1/2 cup chopped cilantro, divided
6 large tostada shells
1 16-oz can refried beans, heated
1 avocado, halved, pitted, and peeled
1/2 cup Mexican crema or sour cream
1/4 cup crumbled queso añjo cheese (also called cotija)

Directions
Chop onion and toss together with lettuce and half of cilantro. In a separate bowl stir salsa and remaining cilantro into the shredded chicken.Spread tortillas thickly with heated refried beans and then top with chicken mixture. Slice avocado over tostadas and dollop with crema. Mound lettuce mixture on top and sprinkle with cheese.
