Bacon Onion Jam

This bacon onion jam is one of the best things you will ever eat. Use as a topping for grilled meat or chicken or as a condiment for burgers or a grilled cheese sandwich. You can double or triple this recipe and pack the jam into jars for an excellent hostess gift. This jam can be refrigerated and kept for up to 5 days -- but it most likely won't last that long.

Ingredients
4 uncooked thick applewood-smoked bacon slices, chopped
1 tablespoon butter
2 medium-size sweet onions, chopped
4 large shallots, chopped
1/2 cup balsamic vinegar
3 tablespoons light brown sugar
2 1/2 teaspoons kosher salt
2 tablespoons chopped fresh chives
2 teaspoons chopped fresh thyme

Directions
Cook bacon in a medium skillet over medium-low heat, stirring occasionally, 8 to 10 minutes or until crisp. Remove bacon, and drain on paper towels, reserving drippings in skillet.

Add butter to drippings, and stir until butter melts. Increase heat to medium; add onions, and sauté 10 to 12 minutes or until tender. Add shallots, vinegar, sugar, and kosher salt, and cook, stirring constantly, 1 to 2 minutes or until sugar dissolves.

Reduce heat to low, and cook, stirring occasionally, 20 to 25 minutes or until onions are very tender and brown. Remove from heat; stir in chives, thyme, and bacon. Cool completely (about 20 minutes), or refrigerate in an airtight container up to 3 days.
