Bacon Wrapped Jalapeño Poppers

These zesty little bites are completely addictive and make a great afternoon snack or appetizer for your next get-together. Make sure to use regular cut bacon as opposed to thick cut bacon for this recipe or the jalapeños will be difficult to wrap. This recipe makes 24 poppers but can easily be doubled.

PREP TIME: 10 minutes
COOK TIME: 30 minutes

Ingredients
12 jalapeño peppers
1 8-ounce block cream cheese, softened
4 ounces cheddar or jack cheese, shredded
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 tablespoon olive oil
6 slices regular-cut bacon
1/2 teaspoon salt
1/2 teaspoon pepper

Directions
Heat a small skillet to medium-high and add oil. Add onions and cook for 4-5 minutes, until the onions just begin to brown on the edges. Add garlic and cook for one minute more. Remove from heat and let cool for a few minutes.

While the onion mixture is cooling, slice jalapeños in half lengthwise, leaving the stems attached. Use a spoon to scoop out the seeds.

Preheat your oven to 400 F.

Slice the bacon strips in half lengthwise.

Once the onions have cooled, mix together cream cheese, cheddar or jack cheese, onions, salt and pepper in a bowl.

Spoon about a tablespoon of cheese mixture into each jalapeño half. Wrap each jalapeño half with one strip of the sliced bacon. Arrange, cut side up on a baking sheet. Bake for 20-25 minutes until the bacon is crispy and browned. Remove from heat and let stand a few minutes before serving.
