Caramelized Balsamic Red Onions

This sweet condiment makes a wonderful topping for a burger, veggie sandwich or bean soup. The secret to properly caramelizing an onion is not to rush it -- cook low and slow for the deepest, richest flavor.

PREP TIME: 5 minutes
COOK TIME: 30 minutes

2 large red onions, ends removed, peeled and sliced
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon balsamic vinegar
Salt, to taste

Heat oil and butter in a large, heavy skillet to medium on the stove top. Add onions and toss to coat with the fat. Cook, stirring every few minutes, until the onions become soft and a dark, red color -- the entire process should take about 25 minutes. The last few minutes of cooking, add vinegar, season with salt and stir. Once onions have cooked down, remove from heat and let stand a few minutes before serving.
