Caramelized Onion and Blue Cheese Tart
You do not have to be a Michelin chef to make this show-stopper of a dish that will have your guests begging for more! With just a handful of ingredients, this tart makes an impressive appetizer or wonderful brunch or lunch fare. The secret to properly caramelized onions is not to rush it -- low and slow makes for the best depth of flavor. This recipe makes 6-12 servings (depending on how big of a piece you're serving).

Ingredients
1 sheet of store-bought frozen puff pastry, defrosted
1 tablespoon olive oil
1 tablespoon butter
1 large red onion, sliced
8 ounces blue or gorgonzola cheese, crumbled
Salt, to taste
Handful of freshly chopped parsley
Honey, for drizzling (optional)
Directions
Heat oil and butter in a large skillet to medium on the stove top. Add onions and stir gently to coat all of the onions with the fat. Cook, stirring every few minutes, until the onions are a golden caramel color. The entire process should take 25-30 minutes. Season lightly with salt the last few minutes of cooking. Remove onions from heat and set aside.
Preheat your oven to 400 F.
Line a 9" x 13" sheet pan with parchment paper. Carefully unroll the puff pastry onto the pan and press down lightly with your (clean) hands to flatten out any creases in the pastry.
Arrange onions over the pastry, making sure to spread out in an even layer. Leave about 1/2" on the edges of the pastry bare. Add cheese in an even layer over the top of the onions. Bake the tart for 25-3o minutes, until the edges of the tart are golden and crispy. Remove from the oven, garnish with parsley and drizzle lightly with honey (if using). Serve immediately.
