Caramelized Onion and Hatch Chile Grilled Cheese Sandwich

The childhood favorite is all grown up in this spicy, sweet, cheesy and delicious sandwich. You'll have leftover caramelized onions from this recipe; they're great as a burger topping or stirred into sour cream for a quick onion dip. This recipe makes 2 sandwiches.

PREP TIME: 10 minutes
COOK TIME: 15 minutes

Ingredients
For the caramelized onions:
2 tablespoons olive oil
1 tablespoon butter
2 large red, yellow or sweet onions, sliced
Salt, for seasoning

Remaining ingredients:
4 slices good-quality whole grain bread
2 roasted hatch chiles, sliced
4 ounces extra-sharp cheddar cheese
Dijon mustard
2 tablespoons butter

Directions
Make the caramelized onions: Heat butter and oil to medium in a large, heavy skillet. Add the onions and toss to combine. Cook for 15-20 minutes, stirring occasionally. Remove from heat and set aside to cool.

Place two slices of bread on your work surface and spread with Dijon. Add cheese on top of bread, distributing evenly amongst the two slices of bread. Add a scoop of caramelized onion and the sliced chiles on top of the cheese. Place remaining two slices of bread on top of the sandwiches.

Heat a large, heavy skillet to medium on the stove top. Add butter and let melt. Gently place sandwiches in the pan and cook for 10-12 minutes, flipping once in the middle of cooking. Once the sandwiches are golden brown and the cheese is melted, remove from pan, slice and enjoy!
