Caramelized Shallot Mashed Potatoes

Sweet and creamy, these mashed potatoes make an excellent side to a piece of grilled steak. This recipe makes 4 servings but can easily be doubled.

PREP TIME: 10 minutes
COOK TIME: 30 minutes

4 tablespoons butter, divided
3 large shallots, peeled and sliced into rings
3 cloves garlic, minced
1/4 cup whole milk
1 1/2 pounds Yukon Gold potatoes, peeled
Salt and pepper, to taste

Please potatoes in a large saucepan. Add enough water to cover the potatoes buy at least one inch. Bring to boil over medium heat. Reduce heat to a simmer and cook for 15-20 minutes or until potatoes are fork-tender. Once cooked, turn off the heat, drain potatoes in a colander, add back to pan and cover to keep warm.

Heat 2 tablespoons butter in a small skillet to medium heat on the stove top. Add shallots and cook until the shallots turn golden brown, about 5-6 minutes. Add garlic and cook for two more minutes. Once cooked, add shallot mixture to the potatoes. Add milk and remaining butter and mix until potatoes are the consistency you like them. Season with salt and pepper as needed and serve.
