Ceviche
Easy to prepare and delicious, this dish is for the seafood lover in your life. We happen to think this refreshing dish is best served on a warm evening al fresco with a glass of something cold to drink! It's great with tortilla chips or served in martini glasses for a fun appetizer. This recipe makes 8 servings.

Ingredients
1 pound fresh fish, cut into 1/3" pieces (try peeled and deveined shrimp, sea bass, scallops or halibut -- or a combination)
1 cup fresh lime juice
1 cucumber, peeled and diced
2 avocados, peeled, pitted and diced
3 tomatoes, chopped
1 red onion, peeled and chopped
Large handful of fresh cilantro, chopped
1 jalapeño, seeded and minced
1 cup tomato or V8 juice
Directions
Fold together fish and lime juice in a nonreactive bowl. Cover and refrigerate for 2 hours.
Once the fish is marinaded, add remaining ingredients to the fish and fold to combine. You can serve right away or store, covered and refrigerated, for up to 3 days.
