Chicken and Mushroom Sauté
This quick meal uses just a handful of ingredients and is so flavorful. Serve with a green salad for a well-rounded and easy dinner.
PREP TIME: 10 minutes
COOK TIME: 15 minutes
1 pound boneless, skinless chicken breast, cut into 1-1/2 inch pieces
2 cups mushrooms, cleaned and sliced (we used oyster mushrooms, but any variety will work)
1 large yellow onion, cut into slivers
3 cloves garlic, minced
1 tablespoon butter
1 tablespoon olive oil
1/4 cup heavy cream
1/4 cup dry white wine
Salt and pepper, to taste
Heat a large skillet to medium and add olive oil. Sauté onions and chicken until onions are fragrant and translucent, about 5-6 minutes.
Add butter, garlic and mushrooms and cook until the mushrooms begin to soften and release their water, about another 5 minutes. Add wine and scrape the bottom of the pan with a wooden spatula to release all the brown bits. Add cream and continue to cook until cream begins to thicken, about another 2-3 minutes.
Remove from heat and serve immediately.
