Crispy Onion Rings

Ingredients
1 large sweet onion
1 cup all-purpose flour
1 cup rice flour
1 tsp baking powder
1 tsp salt
1/4 tsp black pepper
Cold beer (add gradually until a thick batter forms)
Oil for deep frying
DirectionsPeel the onion and slice into rings about 1/2 inch thick.
Separate the rings with your fingers.
In a large bowl, add the onion rings. Add the all-purpose flour and rice flour. Toss to coat the onion rings in the dry mixture.
Add the baking powder, salt, black pepper, and cold beer. Mix everything together until you get a thick, smooth batter that coats the onion rings.
Heat oil in a deep pan or fryer to 175–180°C (350–360°F).
Lift the onion rings from the bowl, letting the excess batter drip off.
Fry in batches for 2–3 minutes, until golden brown and extra crispy.
Remove and drain on paper towels.
Serve hot with your favorite dipping sauce and enjoy!
