Easy Shrimp Tacos

These simple tacos are quick to put together, making them an excellent weeknight meal option. This recipe makes 4 tacos but can easily be doubled.

COOK TIME: 5 minutes

Ingredients
For the shrimp:
1 pound medium or large shrimp, peeled and deveined
Juice from 3 fresh limes
2 tablespoons freshly chopped cilantro
2 garlic cloves, minced
1/2 teaspoon ground cumin
1 tablespoon olive oil
Zest of 1 lime
Kosher salt

For the taco assembly:
8 small corn tortillas, lightly grilled
Chopped cabbage
Sliced avocado
Red or white onion, thinly sliced
Chopped fresh cilantro

Directions
In a large bowl, whisk together lime juice, cilantro, garlic, cumin, olive oil, lime zest and season with salt. Add shrimp and cover with plastic wrap. Let marinate 20 minutes in refrigerator.

Preheat your grill or grill pan to medium. Grill shrimp for 5-6 minutes or until opaque, flipping once in the middle of cooking.

To assemble the tacos, place a couple of shrimp into 2 shells folded together and top with cabbage, avocado, onion and cilantro. Serve immediately.
