Everything Veggie Sub Sandwich

This veggie sub is loaded with flavor and makes the perfect lunch for your next picnic or beach day. Feel free to add in whatever veggies you like -- it's all good! This recipe makes two sandwiches.

COOK TIME: 0 minutes

2 hoagie rolls, split (we used multi-grain rolls)
1/2 red onion, thinly sliced
1 small can of sliced black olives
10-12 pepperoncini, stemmed
1/2 cucumber, sliced
10-12 artichoke quarters, from an oil-packed marinated jar
8-10 jarred roasted red peppers
4 ounces sliced Swiss, Provolone or Jack cheese
A couple handfuls of baby greens or spinach leaves
1 teaspoon dried oregano flakes
Oil and red wine vinegar, for drizzling
Salt and pepper, to taste

Place bottom sides of rolls on your work surface. Layer veggies and cheese on rolls, distributing evenly. Drizzle with oil and vinegar, then season with salt, pepper and oregano. Place tops of rolls on sandwiches. Eat right away or wrap up in butcher paper for later -- the sandwiches will be just as delicious for up to 4 hours after preparation.
