Fresh Corn Salsa
This sweet, crunchy salsa makes use of the season's Summer-sweet corn and it's a snap to put together. It's wonderful atop a piece of grilled chicken or served as a snack with corn chips. This recipe makes approximately 8 servings.

Kernels from 4 ears of sweet corn
1 medium-sized red onion, finely chopped
Handful of fresh cilantro, finely chopped
1 medium jalapeño, cored, seeded and minced
Juice from 2 fresh limes
Salt and pepper, to taste
Combine first 5 ingredients in a nonreactive glass bowl. Adjust seasoning as needed. Serve right away or cover and refrigerate for up to 3 days.
