Frittata with Caramelized Onions and Herbs

This easy frittata makes a wonderful brunch, lunch or light dinner. We've pared down the ingredient list for the sake of simplicity; toss in a few jarred red peppers or sautéed mushrooms for extra flavor. This recipe makes 4 servings.

COOK TIME: 35 minutes

Ingredients
For the caramelized onions:
1 large yellow onion, chopped
1 tablespoon olive oil
1 tablespoon butter
Salt, to taste

Remaining ingredients:
8 eggs, beaten
2 tablespoons chopped fresh herbs of your choice (we used parsley)
4 ounces crumbled goat cheese
Salt and pepper, to taste

Directions
Preheat your oven to 350 F.

Heat oil and butter in a medium-sized cast-iron skillet to medium-low on the stovetop. Add onions and toss to coat with the fat. Cook, stirring occasionally, until the onions are softened and a golden brown; the entire process should take about 20 minutes. Season with salt the last few minutes of cooking. Once cooked, fold in herbs.

Add eggs over the top of the onions and sprinkle with cheese. Season with salt and pepper and bake in the oven for 15 minutes, or until the eggs are set. Remove from oven, let stand for a few minutes to cool, slice and serve.
