Gnocchi with Mushrooms and Caramelized Onions

Take your weeknight pasta dinner to new heights with the winning combination of mushrooms and golden, caramelized onions. Quick to make, we love to serve this with a simple side salad. This recipe makes 4 servings.

COOK TIME: 25 minutes

Ingredients
16 ounces potato gnocchi
1/2 pound fresh mushrooms of your choice, brushed clean and sliced
1 medium sweet or yellow onion, sliced
1 tablespoon olive oil
2 tablespoons butter
1/4 cup dry white wine or chicken/vegetable stock
Salt and pepper, to taste
Freshly grated parmesan, for serving

Directions
Cook gnocchi according to package instructions, drain and set aside.

Heat butter and oil in a large, heavy skillet to medium-high on the stove top. Add onions and stir to coat with the fat. Cook for 5 minutes. Add mushrooms and fold with onions; season with salt. Continue to cook for 10 minutes or until the mushrooms have released most of their water and the vegetables are crisp on the edges. Pour in wine, making sure to scrape up all of the brown bits off the bottom of the pan with a wooden spoon. Once wine has reduced be half, add gnocchi and fold together. Adjust seasoning and let cook for a few more minutes. To serve, add a scoop of pasta to a serving dish and garnish with parmesan.
