Grilled Pork Skewers with Red Onion and Mint

These zesty skewers are taken to the next level with a tangy, herbacious marinade that also works well with chicken. We love these beauties served alongside some grilled veggies. This recipe makes approximately 8 skewers.

COOK TIME: 10 minutes

Ingredients
For the marinade:
1/2 cup olive oil
1/4 cup white wine vinegar
Small handful of fresh mint, finely chopped
Small handful of fresh parsley, finely chopped
1/2 teaspoon dried oregano leaves
1/2 teaspoon chili flakes
Juice from 1 lemon

1 1/2 pounds trimmed pork loin, cut into 1 1/4″ cubes
Salt and freshly ground black pepper, to taste
Thinly sliced red onion and lemon, for serving

Directions
Combine all marinade ingredients in a large, non-reactive bowl and whisk to combine. Add pork, cover and refrigerate for at least 3 hours and up to 8 hours.

Preheat your grill to medium. Soak 8-10 wooden skewers in a bowl of water for 10 minutes so they don't burn up on the grill (or use metal skewers).

Thread 5-6 pieces of pork onto each skewer and grill for 10 minutes, or until the meat is cooked through and charred on the edges. Remove from heat and let rest before serving.

Serve with fresh red onion slices and lemon wedges.
