Hawaiian Chicken Sandwiches
These sweet and savory beauties use store-bought rotisserie chicken, making them quick to prepare. Totally kid-friendly, you can prepare these as sliders using Hawaiian dinner rolls for a great appetizer at your next pot-luck. This recipe make 6 large sandwiches or approximately 12-15 sliders.
PREP TIME: 15 minutes
COOK TIME: 5 minutes
One store-bought rotisserie chicken, shredded
1 cup store-bought teriyaki sauce (we like Soy Vay)
6 ciabatta or whole-grain buns, split
12 pineapple rings
12 slices deli ham
12 thin slices swiss cheese
1 red onion, thinly sliced
12 leaves green lettuce
1 tablespoon olive oil
Toast the bread. Preheat oven to 375 degrees. Drizzle olive oil over bun halves and bake in the oven for 3-5 minutes, until slightly browned. Set aside.
Combine shredded chicken and teriyaki sauce in a bowl.
Assemble the sandwiches. Layer chicken, pineapple, ham, cheese, onion and lettuce evenly on the heel side of the buns. Cover with bun tops. Serve immediately.
