Mango Avocado Salsa

This fresh salsa is a snap to prepare and is just wonderful on a hot day. It's great eaten with chips or as a topping for grilled chicken. This recipe makes 4-5 servings but can easily be doubled.

Ingredients
1 ripe mango, peeled and diced
1 ripe avocado, peeled, pitted and diced
1/2 red bell pepper, cored, seeded and chopped
1 small red, white or sweet onion, chopped
1/2 jalapeño, seeded and diced (optional)
1/4 cup chopped fresh cilantro or parsley
Juice from 2 fresh limes

Directions
Fold all ingredients together gently in a non-reactive bowl. Cover and chill for at least an hour before serving.
