Meatloaf with Brown Sugar Glaze
This crowd-pleasing comfort food is always a hit and our version is one mom would approve of! Easy to prep and tasty to eat, we like to serve this with steamed vegetables and mashed potatoes. This recipe makes 8 servings.

Ingredients
For the meatloaf:
2 pounds 85% lean ground beef
1 medium yellow or white onion, finely chopped
2 large eggs
3 garlic cloves, minced
3 tablespoons tomato paste
2 tablespoons fresh Italian parsley, minced
3/4 cup finely ground breadcrumbs (we used panko crumbs)
1/3 cup milk
1 1/2 teaspoons salt
1 1/2 teaspoons Italian seasoning
1/4 teaspoon ground black pepper
1/2 teaspoon smoked paprika
For the glaze:
3/4 cup tomato paste
2 teaspoons apple cider vinegar
3 tablespoons brown sugar
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
Directions
Line a 9" x 5" loaf pan with parchment paper. Preheat your oven to 375 F.
Add all meatloaf ingredients to a mixing bowl and combine with your (clean) hands. Be sure not to over mix or the meatloaf will not be tender. Press gently into the loaf pan. Bake for 40 minutes.
Remove the meatloaf from the oven. Combine all glaze ingredients in a small bowl and pour over the top of the meatloaf. Return to the oven for an additional 15 minutes, until the glaze becomes caramelized.
Remove the meatloaf from the oven and let rest for 10 minutes before serving.
