Nonna Maggiolo’s Pasta Sauce

Ingredients
1 lb ground beef
1/2 lb ground sausage
1/2 lb ground turkey or chicken
3 28oz cans stewed tomatoes
3 28oz cans whole tomatoes (chopped)
2 15oz cans tomato sauce
2 6oz cans tomato paste
6 medium yellow onions (chopped)
2-3 cloves garlic (chopped)
1 bunch parsley (chopped)
2 cups of dried Porchini mushrooms (chopped and soaked in water)
A pinch or more of oregano, rosemary, basil,
Salt and pepper to taste
4 bay leaves

Directions
In a large skillet combine all your meats and fry in olive oil. In a large stock pot add the canned tomatoes, sauce, paste and the juice from soaking the mushrooms (about 2 cups). Stir in the fried meats. Sauté the onions, parsley and mushrooms in olive oil with the seasonings for about 3 to 4 hours.
