Open-faced Apple and Caramelized Onion Sandwich
This sweet and savory sandwich will warm your soul and makes a great breakfast or snack. Make a big batch or caramelized onions and turn this into a breakfast-on-the-go throughout the week. This recipe makes two sandwiches.
PREP TIME: 5 minutes
COOK TIME: 50 minutes
2 3/4" thick slices of crusty whole-grain bread (sourdough also works well)
1 apple, cored and sliced
1 large sweet or yellow onion, cut into slivers from root to tip
1 tablespoon neutral-flavored oil
2 tablespoons butter, divided
1/2 teaspoon ground cinnamon
2 tablespoons softened goat cheese (optional)
1 teaspoon sugar (optional)
Caramelize the onions: In a heavy skillet, heat oil and 1 tablespoon butter to medium. Add onion slices and sauté for 30-45 minutes, stirring occasionally, until onions soften and turn a deep caramel color. Remove from heat and set aside.
Preheat your oven to broil (or you can use a toaster oven for this recipe). Toast bread lightly on each side and remove from oven. On each slice of bread, spread 1/2 tablespoon butter, 1 tablespoon goat cheese (if using) about 2 tablespoons onions and half of the apple slices. Sprinkle with cinnamon and sugar (if using). Broil just until the apples begin to soften and warm through. Serve immediately.
