Sausage, Pepper and Onion Skillet
I have been making this dish since I was a child, and it's still one of my favorites to this day. You can substitute boneless chicken breast for the sausage, if you like. This recipe serves two.
PREP TIME: 5 minutes
COOK TIME: 15 minutes
1 russet potato, sliced into 1/4 inch rounds
2-3 links turkey sausage, sliced into rounds
1/2 yellow or white onion, cut into half-moons
1/2 red or yellow bell pepper, sliced into strips
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper, to taste
Bring a pot of water to a boil. Parboil sliced potatoes until half-cooked, about five minutes. Drain well.
Heat a large skillet to medium-high. Add olive oil, potato, pepper, onion and oregano to pan. Sauté until vegetables are beginning to brown, about five minutes. Add sausage to pan and continue to cook for another five minutes. Season with salt and pepper to taste and serve immediately.
