Slow Cooker BBQ Beef Brisket Sandwich

Grab the slow cooker and lots of napkins for these savory, saucy, completely awesome sandwiches! Although they take some time to cook, the prep time is fast so you can get on with your day while until the brisket is ready to eat. We've kept the ingredients to a minimum in our version, but feel free to add a scoop of coleslaw or some pickles to the sandwiches -- it's all good! This recipe makes 6 sandwiches.

COOK TIME: 5 hours 0 minutes

Ingredients
For the brisket:
2 1/2 pounds flat-cut brisket
1 yellow onion, sliced
1/4 cup apple cider vinegar
1 cup store-bought BBQ sauce

Remaining ingredients:
12 slices bread of your choice, toasted

Directions
Place brisket, in a 4-6 quart slow cooker, fat side up. Top with the sliced onion. Whisk together the apple cider vinegar and BBQ sauce and pour over brisket. Cover and cook on high until brisket is tender, about 5 hours.

Let the meat rest about 20 minutes before slicing. To assemble sandwiches, pile brisket slices on top of one slice of bread and drizzle remaining sauce over the brisket. Top with another slice of bread. Serve and enjoy!
