Slow Cooker Beef Vegetable Soup

This is a traditional beef and veggie soup recipe that is so good to come home to after the days tasks. Serve with crusty bread and a simple salad if you like. This recipe makes 8-10 servings.

COOK TIME: 8 hours 0 minutes

1 pound beef top round steak, cut into 1/2-inch cubes
3 cups good quality beef stock (we like Kitchen Basics brand)
1 14-ounce can diced tomatoes, with the juice
2 medium potatoes, peeled and cut into 1" pieces
2 medium yellow onions, diced
3 celery ribs, sliced into 1" pieces
2 carrots, sliced into 1"pieces
1 teaspoon salt
1/4 teaspoon pepper
1 cup fresh green beans, cut into 1"pieces
1/2 cup corn kernels
1/2 teaspoon dried basil
1/2 teaspoon dried oregano

In a 3 quart slow cooker, combine the first 9 ingredients. Cover and cook on high for 7 hours. Add the corn, green beans and herbs; cover and cook 1 hour longer or until meat and vegetables are tender.
