Spicy Baked Meatballs
These zippy meatballs are fantastic served over pasta or on their own with a small side salad. This recipe makes 24 meatballs.

COOK TIME: 30 minutes
2 pounds ground beef
2 large eggs, beaten
3/4 cup whole milk
1 cup breadcrumbs
1 teaspoon garlic powder
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon chipotle chili powder
1/2 teaspoon crushed red pepper
4 garlic cloves, minced
1 tablespoon olive oil
1 cup crushed tomatoes
1/2 cup honey
2 tablespoons Sriracha sauce
Preheat oven to 400 F.
In a large bowl, add ground beef, eggs, milk, breadcrumbs, garlic powder, salt, pepper, chipotle chili powder and crushed red pepper. Mix to combine with your (clean) hands.
Roll meat mixture into 1-1/2-inch balls. You should end up with 24 meatballs.
Bake for 20 minutes until firm and no longer pink in the center.
While meatballs are baking add garlic and olive oil to a large skillet heated to medium; cook for one minute. Add tomatoes, honey and Sriracha. Cook until the sauce thickens, about 5 minutes.
Add meatballs to the sauce and gently stir to coat. Serve immediately.
