The Ultimate Greek Salad

This combination of crispy vegetables and salty feta is so refreshing on a hot Summer day. Top with grilled shrimp or chicken for a complete meal in a bowl.

For the dressing:
6 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 garlic cloves, minced
1 teaspoon dried oregano

For the salad:
1 head lettuce, torn into bite-size pieces (we used Romaine)
3 large tomatoes, seeded and coarsely chopped
1 English cucumber, sliced
1 medium red onion, cut into thin rings
1 small green pepper, cut into thin rings
3/4 cup kalamata olives
3/4 cup feta cheese, cut into cubes

Whisk dressing ingredients together until blended and set aside.

Combine all salad ingredients, except cheese, in large bowl. Toss with dressing.

Add cheese and serve immediately.
