Upside Down Shallot & Apple Tarts

Both sweet and savory, these buttery puff pastry tarts are cooked upside down, resulting in perfectly caramelized shallots and crispy puff pastry. These little gems make a wonderful appetizer or afternoon snack -- or a lovely lunch served with a simple green salad. This recipe makes 8 servings.

PREP TIME: 10 minutes
COOK TIME: 25 minutes

Ingredients
1 sheet (14 ounces) puff pastry, thawed
8 teaspoons honey
1 teaspoon fresh thyme leaves
1/4 large apple, thinly sliced
1 shallot, thinly sliced
1/2 cup shredded gruyere cheese
1 egg, beaten
Flaky sea salt and fresh thyme leaves, for garnish (optional)

Directions
Preheat oven to 400 F and line a large rimmed baking sheet with parchment paper.

Cut the puff pastry into 8 equal pieces.

Drizzle 1 teaspoon of honey per rectangle onto the parchment paper. Sprinkle the honey with the thyme leaves (if using).

Place the apples and shallot slices on top of the honey. Top the apple and shallot slices with the shredded cheese.

Place the rectangles of puff pastry over the cheese. Use the prongs of a fork to press the edges of the puff pastry down and create a ridged pattern along the edges.

Brush the puff pastry with the beaten egg.

Bake for 20 to 22 minutes until the pastry is golden brown.

Remove the tarts from the oven and carefully flip with a spatula. Top with optional flaky sea salt and additional chopped fresh thyme.
