Easy Vegan Stir Fry
This satisfying dish is a cinch to make and works for lunch or dinner. It packs up well for a not-sad desk lunch, too -- you don't even have to reheat it! We've kept our ingredient list short for the sake simplicity but you can toss in whatever veggies you like. This recipe makes 2 servings.

Ingredients
For the sauce:
3 tablespoons soy sauce or tamari
1 tablespoon toasted sesame oil
1 tablespoon maple syrup or sugar
1–2 teaspoons rice vinegar
1 teaspoon grated fresh ginger (optional)
1 small garlic clove, minced
2 tablespoons water
For the stir-fry:
8 ounces soba noodles, cooked according to package directions
1 red or yellow bell pepper, thinly sliced
1 small yellow onion, thinly sliced
3–4 green onions, chopped
1 1/2 cups mushrooms, sliced
2 tablespoons neutral-flavored oil
3 tablespoons soy sauce or tamari
1 tablespoon toasted sesame oil
1 tablespoon maple syrup or sugar
1–2 teaspoons rice vinegar
1 teaspoon grated fresh ginger (optional)
1 small garlic clove, minced
2 tablespoons water
For the stir-fry:
8 ounces soba noodles, cooked according to package directions
1 red or yellow bell pepper, thinly sliced
1 small yellow onion, thinly sliced
3–4 green onions, chopped
1 1/2 cups mushrooms, sliced
2 tablespoons neutral-flavored oil
Directions
Make the sauce: Whisk all sauce ingredients together in a nonreactive bowl. Set aside until ready to use.
Heat oil in a wok or large frying pan to medium-high on the stove top. Add onions and cook for 3-4 minutes, until they become soft and translucent. Add mushrooms and cook for 5-7 minutes. Add bell peppers and cook for another 2-3 minutes. Add noodles and sauce and toss together; let cook for two more minutes. Garnish with green onions and serve.
