Falafel Salad with Tahini Dressing
This vegetarian bowl is packed with fiber, flavor and good-for-you veggies. It makes a satisfying lunch or dinner for both the meat and non-eaters alike. You will have leftover tahini dressing from this recipe -- use it to top a veggie sandwich or burger. This recipe makes 2 salads.

Ingredients
For the tahini dressing:
1/2 cup tahini
Juice from 2 fresh lemons
1 clove garlic, grated
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup water (more if you want a thinner dressing)
For the salad:
1 10-ounce package store-bought falafel mix (find at well-stocked supermarkets)
6 ounces baby greens, washed and dried
8-10 grape or cherry tomatoes, washed, dried and halved
1/2 small red onion, thinly sliced
1/2 cucumber, sliced
1 avocado, pitted, peeled and sliced
Handful of freshly chopped Italian parsley
4 ounces Feta cheese, crumbled
Pita bread, for serving (optional)

Directions
Make the dressing: Using your blender, mix all ingredients until well combined. Taste and adjust seasoning if necessary. Store in a non-reactive container until ready to use.
Cook the falafel patties according to package instructions.
To assemble the salads, arrange the greens in two serving bowls, distributing equally amongst the bowls. Add falafel patties, tomatoes, onion, cucumber, avocado, parsley and cheese to the bowls. Drizzle with dressing and serve.
