The Canadian Government released a Food Recall Warning for Microbiological Salmonella on July 31st that has been traced to onions distributed throughout Canada and the United States. It has been has been determined and stated by the FDA and the Canadian Government that the contamination originated from Thompson International, Inc. in Bakersfield, CA. Peri & Sons does not sell to any of the parties that have been implicated in this recall and we are confirming that the onions named in this incident are not from our company. Onions from Peri & Sons Farms are safe for consumption.

Peri & Sons Farms has the strictest food safety policies in place to ensure the safety of our customers and end consumers. Our internal food safety standards and practices require that all onions, red, white, sweets and yellows, sold from our farms and packing shed facilities carry a certificate of analysis with negative results for both Salmonella and E. coli. We have provided documentation of our testing analysis for your reference as attachments. See Certificates of Analysis. (COA)

Confirmation of our ongoing testing practices and food safety certificates are available for review. The food safety standards and pathological testing consistently prove the purity of our onions. One Thing in Common
Did you know onions are the only basic ingredient found in every single solitary cuisine around the world? Onions are endlessly versatile and an essential ingredient in countless recipes. Believed to be native to Asia, these underground bulbs are prized all over the world; they are definitely prized in Yerington, Nevada at Peri & Sons Farms where we have been growing premium white, red, yellow, sweet and organic onions since 1979.

Herby Turkey Sliders
Ingredients
1 pound ground dark turkey meat
1 tablespoon tomato paste
1/4 cup minced red onion
1/4 cup fresh basil leaves finely chopped
1/4 cup fresh parsley finely chopped
3 teaspoons 1 tablespoon minced garlic
1/2 teaspoon sea salt
1/8 teaspoon, freshly ground black pepper
1 teaspoon lemon zest
1 1/2 teaspoon toasted fennel seeds
1 1/2 teaspoon dried oregano
1/4 teaspoon red chili pepper flakes
Directions
Toast the fennel seeds in a small sauté pan over medium heat, shaking a few minutes for even toasting, until they become aromatic and start to brown slightly. Be careful that they don’t burn. Let cool slightly, then pulse a couple times with a mortar and pestle or spice grinder or a clean coffee grinder.

In a large bowl combine the tomato paste, onion, basil, parsley, garlic, salt, lemon zest, fennel, oregano and red pepper flakes. Add the turkey to the bowl and gently combine (or moosh) until the ingredients are distributed. Shape the mixture into 2 ounce patties (about the size of your hands).

Heat a grill pan brushed with oil, brown the patties over medium heat on both sides, about 3 minutes each. Cover and continue 3 more minutes until cooked through.

Or, in a sauté pan, add just enough oil to coat a hot pan, sauté about 3 minutes on each side to brown, reduce heat, add a tablespoon of water, cover to steam the inside about 3 more minutes. Serve in a pita or a bun with lettuce, tomato and a slice of avocado.

Storage: Store refrigerated in airtight container for Freezer: individually wrapped for 3 months.
