Vegan Tacos with Tahini Sauce
You will not miss the meat when you try these fiber and protein (and flavor) rich tacos. They're a snap to prepare and make an excellent and satisfying lunch. This recipe makes 4 tacos.

Ingredients
For the tahini sauce:
3 cloves garlic, grated
1/4 cup fresh lemon juice
1/2 cup tahini paste
1/2 teaspoon fine sea salt
6 tablespoons ice water, more as needed
For the taco "meat":
1 15-ounce can chickpeas, washed and drained
1 tablespoon olive or coconut oil
1 tablespoon store-bought vegan seasoning
For the taco assembly:
6 corn tortillas
1 avocado, peeled, pitted and sliced
1/2 red or white onion, thinly sliced
1 jalapeño, cored, seeds removed and thinly sliced (more or less to taste
1 green onion, thinly sliced
2 handfuls of baby greens (or spinach)
1/2 cup pomegranate arils, chopped mango or pineapple

Directions
Make the tahini sauce: Combine garlic, lemon juice, tahini and salt in a nonreactive bowl. Whisk well to combine. Add about a tablespoon of water and whisk; keep adding water a tablespoon at a time until the sauce is as thick as you prefer. Store, covered and in a nonreactive container for up to 3 days.
Make the beans: Heat oil in a skillet to medium on the stovetop. Add beans and taco seasoning to the pan and cook for 5-7 minutes. Remove from heat and let stand for a few minutes.
To assemble the tacos, add a scoop of beans to each shell and add remaining ingredients. Drizzle with tahini sauce and serve.
