Ingredients
2 cups diced watermelon
1 1/2 cups diced jicama
2 serranos or jalapeños, finely diced
1/2 cup red onion, finely diced
1/4 cup chopped cilantro
Juice of 1 lime
1 teaspoon kosher salt

Directions
Peel and dice the jicama into small, even pieces.
Dice the watermelon into similar-sized pieces for even texture.
Finely dice the serranos (or jalapeños) and chop the cilantro.
Finely dice the red onion and add it to a medium bowl.
Add the lime juice and salt to the onion, and let it sit for 2–3 minutes to slightly soften its bite and enhance its flavor.
Add the watermelon, jicama, jalapeños, and cilantro to the bowl.
Gently mix until everything is evenly combined.
Taste and adjust lime juice or salt as needed.
Serve immediately or chill briefly before serving.
Notes:?For mild spice, use 1 jalapeño and remove its seeds and veins.
