4 yellow onions, thinly sliced
1 head of garlic, top sliced off
1/2 cup olive oil
2 teaspoons paprika
2 teaspoons Italian seasoning
1 teaspoon salt
1/2 teaspoon ground black pepper
1-pound chunky pasta (like farfalle or fusilli)
1/2 cup heavy cream
Juice of 1 lemon
1/4 cup roughly chopped parsley
Optional – lemon wedges and lemon juice for serving
Directions
Preheat oven to 375 degrees F.
Combine the onions and garlic in a large baking dish. Pour the olive oil over the onions and garlic. Sprinkle with the paprika, Italian seasoning, salt, and black pepper. Toss to combine.
Bake for 1 hour or until the onions have caramelized and are golden brown. Toss once after 30 minutes of cooking.
Meanwhile, cook the pasta according to package directions. Strain and set aside.
After removing the onions from the oven, squeeze the garlic cloves out of the head of garlic and mash them into the onion mixture.
Add the heavy cream to the pan and stir to combine.
Stir in the pasta and parsley.
