Caramelized Onion and Artichoke Dip
This gooey, cheesy, extra flavorful dip makes a great game day snack or appetizer for your next get-together. Do take the time to properly caramelize the onions -- it really does make a difference in the final product. This dip is wonderful served with sliced French bread or pita chips. This recipe makes 4-6 servings.

Caramelized Onion and Artichoke Dip
Ingredients
1 tablespoon olive oil
1 large yellow or sweet onion, chopped
8 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup parmesan cheese, grated
2 6-ounce jars marinated artichoke hearts, with liquid
2 tablespoons green onion, sliced
Directions
Preheat oil in a large skillet to medium. Add onions and sauté, stirring every 5 minutes, until the onions become a deep, golden color. Remove from heat and let stand for a few minutes until the onions are cool enough to handle.

While the onions are cooling, preheat oven to 375 F.

Add all ingredients to a food processor and pulse until the mix is semi-smooth. Pour into an 8" x 8" glass baking dish and bake for 20 minutes or until the dip is bubbling and slightly browned on the top. Remove from heat and let cool for a few minutes before serving.
