Mexican Shrimp Scampi
We gave this classic Italian dish a south-of-the-border flair with store-bought salsa, cilantro and spicy jalapeño peppers. Serve over rice or pasta, if you like.

Mexican Shrimp Scampi
Ingredients
1/2 red pepper, chopped
1/2 small white onion, chopped
1 small tomato, chopped
2 cloves garlic, minced
10-12 medium sized shrimp
1 tablespoon olive oil
1/4 cup store-bought salsa
1 tablespoon fresh cilantro, chopped
4-5 thin slices of jalapeño pepper (optional)
Directions
Add olive oil to small sauté pan and heat to medium. Add onions and red peppers and sauté for 4-5 minutes. Add garlic and cook for one minute more. Add salsa and reduce heat to medium-low. Add shrimp and cover for 1-2 minutes, until shrimp is no longer translucent. Add tomato and let simmer for another three minutes.

Transfer to plate and garnish with cilantro and sliced jalapeños, if you like.
