Ingredients
1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2" pieces
1 yellow or white onion, sliced
1 bell pepper, cored, seeded and sliced
2 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons Italian seasoning
1 14.5-ounce can fire-roasted tomatoes
Salt and pepper, to taste
Directions
Heat a large, oven-safe skillet to medium-high and add oil. Add onions and cook for 4-5 minutes, until the onions begin to brown on the edges. Remove from heat.
Preheat your oven to 400 F. Add chicken, peppers, garlic, tomatoes and Italian seasoning to the skillet with the onions; toss to combine. Season with salt and pepper. Bake for 35-40 minutes or until the chicken's juices run clear. Let stand for a few minutes before serving.
