Baked Onion Rings
These savory, crispy, crunchy onion rings have way less fat and sodium than their deep-fried cousin and they are totally addictive. You can reheat the leftovers in an oven or your toaster oven (no microwave for these, please) -- that is if you have any left over at all!

Baked Onion Rings
Ingredients
1 1/2 cups crushed corn flakes
2 teaspoons sugar
1 teaspoon paprika
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
2 large sweet onions
Egg substitute, equivalent to 2 eggs
Nonfat cooking spray
Directions
In a bowl, combine the corn flakes, sugar, paprika, salt and garlic powder. Set aside.

Cut the onions into half-inch thick slices.

Separate into rings, saving small rings for another use.

In a small mixing bowl, beat the egg substitute until it is frothy.

Dip the onion rings into egg, them into the crumb mixture, coating thoroughly.

Place in a single layer on baking sheets that have been sprayed with nonfat cooking spray.

Bake at 375° (190°C) for about 18 minutes or until the onions are tender and coating is crispy.
