Flavorful and totally kid-friendly, these quesadillas are quick to prep thanks to the use of store-bought rotisserie chicken and salsa. They make a great lunch or after school snack. This recipe makes 4 quesadillas.

Ingredients
4 large flour tortillas
Breast from a store-bought rotisserie chicken, shredded
2 cups cheddar cheese
1 tablespoon olive oil
1 medium yellow or white onion, chopped
1/2 red bell pepper, seeded, cored and chopped
2 cloves garlic, minced
Nonstick cooking spray
Sour cream and salsa, for serving.
Directions
Heat 1 tablespoon oil in a large skillet to medium-high on the stove top. Add onions and bell pepper; cook until the onions begin to soften and become fragrant, about 5 minutes. Add garlic and cook for one more minute. Transfer vegetables to a plate to cool for a few minutes.
Once veggies are cooled, assemble the quesadillas. Place a flour tortilla on your work surface and add 1/4 of the chicken, covering only half of the tortilla. Add 1/4 of the onion and peppers and 1/4 of the cheese. Fold the tortilla in half. Repeat until all ingredients have been used.
Heat the same pan to medium on the stove top. Spray with cooking spray and carefully place a quesadilla into the pan. Cook until cheese is melted and the tortillas are brown, about 10 minutes, flipping once in the middle of cooking. Repeat until all quesadillas have been cooked. Slice and serve while warm.
