Roasted Onion Dip
This zesty and flavorful onion dip is about the best cocktail party appetizer ever and also makes a great burger topping. It stores well, refrigerated, for up to three days.

Roasted Onion Dip
Ingredients
1 red or yellow onion, chopped
2 tablespoons olive oil
One 8-ounce package cream cheese, softened
1/2 cup sour cream
1/4 cup finely grated Parmesan
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
2 tablespoons thinly sliced chives, plus a pinch for garnish
Kosher salt and freshly ground black pepper
Directions
Preheat your oven to 400 degrees F.

Put the onions a foil lined baking sheet, drizzle with olive oil and sprinkle with salt and pepper. Toss gently to combine. Transfer to the oven and roast for 35 minutes, or until the onions are tender and golden. Set aside to cool completely.

Mix the cream cheese, sour cream, Parmesan, mayonnaise, Worcestershire and chives together.We used a hand mixer for this. Fold in the roasted onions. Refrigerate for at least two hours before serving.
