Quick to put together and loaded with flavor, these protein-packed burritos will keep you going strong into the afternoon. We've pared down the ingredient list for the sake of simplicity but feel free to add some sliced avocado or salsa, if you like. This recipe makes 4 burritos.

Ingredients
For the caramelized onions:
1 sweet or yellow onion, chopped
1 tablespoon olive oil
Salt, to taste
Remaining ingredients:
4 12" flour tortillas
6 large eggs
2 tablespoons butter
6 ounces shredded cheddar cheese
Salt and pepper, to taste
Directions
Whisk together eggs and cheese in a mixing bowl. Season lightly with salt and pepper. Set aside.
Make the caramelized onions: Heat oil in a medium-sized, nonstick skillet to medium-high on the stove top. Add onions a stir to coat with the oil. Cook, stirring every few minutes, until the onions are a golden brown and fragrant. Season with salt the last few minutes of cooking. The entire process should take about 20 minutes. Once onions are caramelized, remove from pan and set aside.
Wipe the pan out with a paper towel and add the butter. Once the butter has melted, add egg mixture. Fold the eggs as they are cooking with a rubber spatula every minute -- this will guarantee you get nice, fluffy eggs. Once the eggs have given off all of their water, remove from heat.
To assemble the burritos, place a tortilla on your work surface and add 1/4 off the egg mixture and a scoop of caramelized onions. Fold over. Repeat with the remaining ingredients. Serve immediately.
