Ingredients
2 large red onions, ends removed, peeled and sliced
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon balsamic vinegar
Salt, to taste
Directions
Heat oil and butter in a large, heavy skillet to medium on the stove top. Add onions and toss to coat with the fat. Cook, stirring every few minutes, until the onions become soft and a dark, red color -- the entire process should take about 25 minutes. The last few minutes of cooking, add vinegar, season with salt and stir. Once onions have cooked down, remove from heat and let stand a few minutes before serving.
