2 1/2 pounds boneless pork shoulder, trimmed of fat
1 tablespoon cider vinegar
1 cup store-bought BBQ sauce
1 red onion, thinly sliced
8 hamburger buns or 16 slider rolls, toasted
Store-bought coleslaw (optional)
Place pork and onions in your slow cooker and season with vinegar. Cook on low for 6 hours. Remove pork from slow cooker, and shred with a fork. Add back to slow cooker, toss with BBQ sauce and cook for one more hour.
To assemble sandwiches, add a scoop of pork the bottom sides of your rolls, top with coleslaw (if using) and place top side of roll on sandwiches. Serve immediately.
