French Onion Fondue
We're taking a blast into the past with this once popular party appetizer -- and we think it's just as good to this day! Melty, aromatic and slightly boozy, this cheese fondue can be served with cubes of good-quality bread or lightly steamed vegetables for dipping.

French Onion Fondue
2 tablespoons olive oil
2 large onions, diced
1/2 pound Swiss cheese, grated and chilled
1/2 pound Gruyére cheese, grated and chilled
2 tablespoons flour
3/4 cup beef stock (we like Kitchen Basics brand for this recipe)
1/3 cup dry sherry
Pinch of nutmeg
Heat a skillet to medium and add oil. Add onions and cook, stirring every few minutes, for 25 minutes, until the onions are soft and golden. Remove from heat and set aside.

Add chilled grated cheese to a large bowl and toss with flour to coat. Set aside.

Heat a medium-sized sauce pot to medium-low and add beef stock and sherry. Slowly whisk in cheese, one small batch at a time, letting each batch melt before you add more cheese. Once all cheese has been added and is melted, stir in onions.

Transfer to fondue pot and sprinkle with nutmeg. Keep fondue warm while serving.
