Green Beans with Onion and Bacon
This easy side dish is a welcome addition to the dinner table. We like to serve this with a piece of grilled steak or chicken.

Green Beans with Onion and Bacon
Ingredients
4 slices of bacon, chopped
1 small onion, chopped
8 cups fresh green beans, woody ends removed
Salt and pepper, to taste
Directions
Fill a large bowl with cold water and a few ice cubes and set aside.

Bring a large pot of water to a boil and season liberally with salt. Drop beans into water and cook for 3 minutes, just until beans are crisp-tender. Remove beans with kitchen tongs and immediately add to ice water to halt the cooking process. Drain beans well and set aside.

In a large skillet, cook bacon and onion over medium heat until bacon is crisp and onion is tender, about 7-8 minutes. Add beans in and cook for about 2 minutes to warm the beans through. Season with salt and pepper and serve.
