Triple-Decker Club Sandwich
This satisfying sandwich makes great picnic fare or an excellent not-sad desk lunch. If you'd like to keep this recipe meat-free, swap in a couple of slices of grilled eggplant for the chicken or turkey. This recipe makes 1 sandwich.

Triple-Decker Club Sandwich
Ingredients
3 slices good-quality whole grain or wheat bread, toasted
3-4 slices cooked bacon
1 cooked chicken breast, sliced or 4 ounces deli turkey
4 slices cheese (try cheddar, jack or Swiss)
1/4 red or sweet onion, sliced into rings
1 small tomato, sliced
1/2 avocado, sliced
Handful of leafy greens
2 tablespoons store-bought hummus
Directions
Place two slices of bread on a work surface. Spread with hummus. Layer bacon, turkey or chicken, onion, tomato, avocado and greens. Top with remaining bread slice, cut and serve.
