1/2 pound flank steak, thinly sliced against the grain
1/2 yellow onion, diced
1/2 cup Massaman Curry paste
2 waxy potatoes, peeled and quartered
2 large carrots, cut into 1 inch pieces
2 cups light coconut milk
1 tablespoon brown sugar
1/4 cup roasted peanuts, chopped
Over medium high heat, sauté the Massaman Curry paste until fragrant. Add coconut milk and bring to a boil. Add beef, onions, potatoes, carrots, brown sugar and roasted peanuts, stirring to combine. Reduce heat to medium low and simmer covered for 30 minutes. Serve immediately.
