Ingredients
For the onions:
2 medium sweet onions, peeled, sliced into rings and separated
1/3 cup cornstarch
Neutral oil, for frying
For the batter:
1/3 cup cornstarch
1 1/2 cups gluten free flour mix
1/4 cup cornmeal
1 teaspoon paprika
1 teaspoon onion powder
2 teaspoons garlic powder
2 teaspoons salt
1 cup milk
1 cup club soda
Directions
Toss onions in 1/3 cup cornstarch, shake off excess cornstarch, and set aside.
Whisk all batter ingredients together.
Heat oil in a large skillet to 350 F on the stove top. Once oil is hot, begin dipping rings into batter with kitchen tongs. Shake off excess batter and immediately add to oil; be sure not to overcrowd the pan. Fry onion rings until golden brown, flipping once in the middle of cooking. Once onion rings are cooked, remove to a paper towel lined plate to drain. Continue frying until all onions are used up. If you have not eaten all of the onion rings during the cooking process, serve immediately.
