This slightly sweet and extremely flavorful skirt steak makes use of an onion blended into the marinade for added tenderness and flavor. As a skirt steak can be a tougher cut of meat, it's crucial to slice the meat across the grain before serving.

Ingredients
1 2-pound skirt steak
For the marinade:
1 small yellow or white onion, chopped
3 cloves garlic, minced
1/2 cup low-sodium soy sauce
1/4 cup apple cider vinegar or unseasoned rice wine vinegar
1" piece of fresh ginger, peeled and finely chopped
2 tablespoons brown sugar
Freshly chopped cilantro and toasted sesame seeds, for garnish
Directions
Make the marinade: Add all marinade ingredients to a blender or food processor and pulse until mostly smooth.
Place skirt steak in a glass baking dish and pour marinade of the top. With your (clean) hands, rub the marinade all over the steak. Cover and refrigerate for 4 hours.
Preheat a gas or charcoal grill to medium-high. Remove steak from the refrigerator while the grill is preheating and let rest on the counter.
Grill the steak for 2-3 minutes per side for medium rare. Remove from heat and let stand for 10 minutes before slicing across the grain. Garnish with sesame seeds and cilantro and serve.
