2 cooked chicken breasts, cut into 1" cubes
1/2 cup low-fat sour cream
1/2 red onion, cut into slivers
2 celery stalks, chopped
1 head leafy green lettuce, washed and dried
Salt and pepper, to taste
In a large bowl, combine chicken, sour cream, onion and celery. Fold gently to combine. season with salt and pepper, to taste.
To serve, place a handful or two of lettuce in a serving bowl and top with a scoop of chicken salad.
